Egg Free Chicken Noodle Soup

The temperatures have been dropping and I am pulling out my soup recipes. Everyone loves chicken noodle soup and it is so easy to make. Chicken noodle soup is typically made with noodles containing eggs, so we are never able to eat it at a restaurant. We make our own chicken noodle soup and even our pickiest eater is happy because we use ramen noodles which are always a kid pleaser. Other egg free noodles, like egg free wide noodles work well too.

Egg Free Chicken Ramen Noodle Soup
Chicken noodle soup is a classic favorite. This broth based soup can easily be made without dairy or eggs by choosing an egg free noodle.. Using ramen noodles is a fun twist, making this meal extra kid-friendly. Be careful to check the ingredients, because many ramen noodle brands contain egg. Maruchan Ramen is one brand that does not contain egg or dairy in the noodles, however, the seasoning packet does contain lactose, which is a milk product. Be sure not to use the seasoning packet if you are avoiding dairy, and always check the labels in because ingredients can change. Egg free wide noodles are another great egg free option for this soup.
Ingredients
- 6 cups chicken broth
- 4 cups water
- 1-2 carrots, peeled and thinly sliced
- 1 rib of celery, thinly sliced
- 1/2 small onion, diced
- 1-2 cloves garlic, minced
- 3 packages Maruchan Ramen noodles (do not use seasoning packet)
- 2-3 cups chicken, cooked and cubed
Instructions

Add broth, water, carrots, celery, onion and garlic to a large pot. Bring to a boil.

Reduce heat, let simmer about 15 minutes, or until vegetables are tender.

Add chicken. Break up ramen noodles and add to soup. Cook about 5-10 more minutes, until ramen is soft.
