Dairy Free Chocolate No-Bake Cookies
A fast, easy, delicious, super sweet chocolate cookie that you or your kids can make in minutes. These do require a little time to set up, ours usually take about 30 minutes, but it depends on the size of the cookie. My family loves them!
Ingredients
- 1/2 cup oil (or dairy free margarine)
- 2 cups sugar
- 3 Tablespoons cocoa
- 1/2 cup coconut milk, soy milk, or rice milk
- 3 cups quick oats
Instructions

Heat oil, sugar, cocoa and milk over medium high heat, stirring frequently. If using dairy-free margarine, start over a low heat until margarine is melted, then turn up heat. Bring mixture to a full rolling boil. Time for exactly 1 minute.*

Remove from heat. Stir in quick oats. Drop by tablespoonfuls onto wax paper and let sit until cookies are set and dry.

*If you boil the mixture for too long the cookies will be too dry. If you don't boil them long enough, they will not set. Altitude and climate can sometimes affect the amount of time required for these to set. Do not boil longer than 3 minutes.
