Simply Delicious Egg-Free Waffles

Waffles and pancakes are the most requested egg-free breakfast items in our home.  For Father’s Day, my husband requested waffles, whipped cream, and strawberries.  He didn’t even ask for a different recipe, he is perfectly happy with our staple egg-free, dairy-free waffle recipe.  I hope you enjoy it as much as we do.

Simply Delicious Waffles

Who says you can't eat waffles if you have allergies? No one will know these are different from a waffle made with eggs. Simply delicious.

Ingredients

  • 1/4 cup applesauce
  • 2 cups soy milk (or coconut, or rice milk)
  • 1/2 cup canola oil
  • 1 Tbsp unpacked brown sugar
  • 2 cups all-purpose flour (We usually do half whole white wheat)
  • 1 Tbsp baking powder
  • 1/2 tsp salt

Instructions

  1. Mix applesauce, soy milk, oil, and sugar until blended. Add flour, baking powder, and salt. Mix until blended and smooth, but do not over mix. There will be a few lumps in the batter.

  2. Pour batter into a heated waffle iron coated with non-stick cooking spray, using amount of batter suitable to your waffle iron (about 2/3 cup for a large waffle). Bake until golden brown (usually when steaming stops). Spray with cooking spray between waffles.

  3. Serve with syrup, jam or coconut whipped cream.

Sometimes my kids like to make these into chocolate chip waffles by folding in a 1/2 cup of Enjoy Life mini chocolate chips before cooking the waffles.
