Easy Egg and Dairy Free Peach Cobbler

Super easy, deliciously sweet and addicting.  Save time on washing dishes because you can mix all of the ingredients in one pan.  The peaches sink to the bottom and you are left with a golden cake that rises to the top.  It tastes the best served hot with vanilla ice cream (we use So Delicious vanilla ice cream made with coconut milk), but if you want it to look nice when you slice it (like the picture), let it cool before cutting.  If you are like me and afraid you might eat the whole pan, you can force some self control by making half of the recipe in a 9x9 pan, but using two cans of peaches.
