Biscofferoo Dairy Free Dessert Bar

Biscoff cookie spread is a favorite in our home. My son often takes Biscoff sandwiches to school, and while it is essentially eating dessert for lunch, it is a quick and delicious alternative to a peanut butter sandwich. We decided to make a Biscoff dessert bar and came up with this tasty recipe.

Biscofferoos

A chocolate-topped Biscoff cookie dessert bar.  The semi-sweet chocolate is a perfect contrast to the sweet and crunchy cookie butter bar base.  If the bar is too sweet to you, try dark chocolate chips for the top as a stronger contrast.  This is a quick and easy recipe that doesn’t require any baking.

Ingredients

  • 1 cup light corn syrup
  • 1 cup white sugar
  • 1 cup Biscoff Cookie Butter
  • 1/4 cup Smart Balance Original Buttery Spread
  • 6 cups crisp rice cereal (like Rice Krispees)
  • 2 cups Semi-Sweet (or Dark) Chocolate Morsels Enjoy Life or Nestle Simple Delicious brand

Instructions

  1. Grease a 9×13 inch baking pan with non-stick cooking spray or Smart Balance spread.  Set aside.

  2. In a large pot, mix together corn syrup, sugar, Biscoff, and Smart Balance spread over medium heat.   Bring to a boil, stirring constantly.  Remove from heat and stir in rice cereal.

  3. Add mixture to 9×13 inch pan.  Place a piece of wax paper on top of the mixture and using your hands, press evenly into the pan.

  4. In a microwave-safe bowl, microwave chocolate chips 1 minute, and stir.  Microwave an additional minute, stirring at 20 second intervals.  Spread over top of bars.  Let bars cool.  To cool faster, put pan in the refrigerator.  When chocolate has dried, cut into squares and serve.
